Kathirikai kadayal or brinjal chutney
This is a one pot and healthy recipe with just three veggies, and done within 20 minutes
Ingredients
Sesame oil - 3 tsp
Mustard and dal - 1 tsp
Dry red chilli - 5
Brinjal/kathirikai -1/2 kg
Onion - 200 grams
Tomato tamarind -200 grams
Salt as required
Curry leaves
Instructions
• Chop the veggies like brinjal onion and tomato add everything to a pressure cooker, add the required water, and cook till 3 whistles
• Once the pressure is released naturally add salt and tamarind and smash well with a wooden Smasher no need to use a blender
• Finally, add tempering, take a small pan and add oil, mustard, and dal, dry red chilly and curry leaves turn off the flame when the color changes
• Add this tempering to brinjal chutney
• Katharikai kadayal or brinjal chutney is ready to relish

Prep work
Chop brinjal and add to a pressure cooker
Then add finely chopped onion or shallots
Then add chopped tomatoes add the required amount of water and close the lid, cook till three whistles
Let the pressure release naturally, then open the lid
Strain the water carefully, because it will be hot
Smash with a wooden smasher, add the required salt ,add that strained water and adjust the constancy of the brinjal chutney
Add tamarind and bring it to a boil
In a small pan add oil, mustard, and dal,
when you hear the cracking sound add dry red chilli and let the color change finally add curry leaves
Add this tempering to katharikai chutney and add fresh coriander leaves for a good flavor and aroma
