Moringa leaves Sambar drumstick leaves Sambar murungai keerai Sambar
The moringa leaves provides a source of energy, is rich in nutrients, and offers numerous health advantages.
Murungai keerai sambar is very simple to make without any hassle, made with toor dal, tamarind extract and coconut paste
Ingredients
Oil - 2 tbsp
Mustard -1 tsp
Toor dal- 1/2 cup
Shallots-200 grams
Tomato -2
Drumstick -1
Cumin - 1 tsp
Coconut -3 tsp
Murungai keerai/drumstick leaves/moringa leaves - 2 cups
Tamarind - a little( small lemon size)
Turmeric powder - 1 /2 tsp
Chilli powder - 1 tsp
Salt as required
Curry leaves
Coriander leaves
Instructions
Pep work
- Rinse the Lentil and Pressure cook until two whistles
- Clean the drumstick leaves and keep it aside
- Soak a little tamarind in fresh water
- Chop the tomatoes, onions,and drumstick
- Add shallot, cumin and coconut to a jar and make a coarse paste
To make moringa leaves sambar/murungai keerai sambar
- Add oil and chopped shallot to a heated kadai and toss well till the onion turns transparent
- Then goes in the tomatoes, drumstick and required salt
- Add turmeric powder, then goes in the chill powder
- Add tamarind water and adjust the consistency by adding fresh water and bring it to a boil
- Add drumstick leaves, and cook well
- Now add coconut paste
- Then add pressure cooked dal and adjust the consistency by add water and bring it to a boil
- Add tempering, in a small pan add oil ,mustard , let it crackle then goes in the finely chopped onion, and curry leaves, fry until golden
- Add this to moringa sambar for a good flavour
- Finally add finely chopped coriander leaves, this gives a good aroma to the sambar

Prep work
Rinse the Lentil and add required water then,Pressure cook till two whistles
Clean the drumstick leaves and set aside
