Kovakkai urulai kizhangu varuval|tindora or ivy gourd potato roast



The combination of both tindora or ivy gourd and potato goes very well with sambar, curd, and rasam rice.

Kovakkai has many health benefits ivy gourd prevents kidney stones and keeps digestive system healthy also avoids iron deficiency.

Very simple and tasty kovakkai urulai roast doesn't require many ingredients to make and tastes delicious

Ingredients 

Oil    - 3 tsp 
Mustard and dal  -1/2 tsp
Chilli powder  -1 tsp
Turmeric powder -1/4 tsp
Onion   - 2
Tomato  -2
Potato  -2
Kovakkai/tindora/ivy gourd -200 grams
Salt as required

Instructions 

  • Do the prep work, slice potato,kovakkai, onion, and tomato into thin strips or thin slices and set aside 
  • Heat a Kadai add oil, mustard, and dal let it crackle 
  • Then add sliced onions and saute well 
  • Add in sliced ivy gourd/kovakkai and cook well 
  • Then add Sliced potatoes and tomatoes and saute well   
  • Do not add water, cook on a low flame  stirring occasionally
  • Now add turmeric powder and chili powder future more add required salt and give a good mix .
  • Kovakkai urulai kizhangu roast is ready to serve with sambar rice, rasam rice, curd rice and lemon rice.

Heat a Kadai add oil, mustard, and dal let it crackle 



Add sliced onions and saute well till it turns translucent



Add in sliced ivy gourd/kovakkai and cook well



Add in sliced tomatoes cook until they become soft


Then add potato 


Add required salt 



Then add turmeric powder 


Add chilli power and saute well till the raw smell disappears 



That's it kovakkai urulai kizhangu varuval is ready to serve

A very healthy ivy gourd/tindora potato roast is ready to serve with sambar rice, curd rice, rasam rice and lemon rice.
