Mixed Vegetable kurma veg kurma


This is my version of making vegetable kurma and tastes delicious if you add right amount of all the spices and vegetables to the kurma. This vegetable kurma goes well with chapati, appam, idiyappam,poori and also with  idly, dosa



Ingredients for veg kurma

  • 2 tablespoon oil
  • 1 Bay leaf 
  • 1onion
  • 2 tomatoes
  • 1/4 tsp Turmeric powder
  • 1 tsp Chilli powder
  • 1/4 tsp Garam masala
  • 3/4  tsp Coriander powder 
  • A pieces of ginger
  • 6 to 7 garlic cloves
  • A small piece of cinnamon/pattai
  • 3 cloves/grambu 
  • A little bit of black stone flower /kalpasi
  • Cardamom/elakai 
  • Cauliflower 1 cup
  • 1 carrot
  • Brocolli 1 cup
  • Chow chow 1 cup
  • Potato 1 cup
  • 5 Beans 
  • Mint leaves
  • Coriander leaves 

Instructions



  • Firstly Clean and chop the veggies
  • Then prepare the ginger, garlic, cinnamon, cloves, fennel, cardamom, black stone flower, mint leaves, coriander leaves, tomato paste and keep it aside 
  • And also prepare coconut, cashew and poppy seeds paste by adding a little water and set aside 
  • Now place a pressure cooker,add oil and bay leaf
  • Then goes in the sliced onion and saute well till it is translucent
  • Then add the ground ginger garlic, spices paste and saute well till the oil gets separated from the gravy
  • Add masalas like turmeric powder, chilli powder, garam masala and coriander powder and give a good mix
  • Now add all the veggies and add required water 
  • Then goes in the coconut,cashew and poppy seeds paste
  • Finally add required salt and close the lid and cook till one whistle or half an hour on low flame
  • Veg kurma is ready to enjoy

Clean and chop the veggies that you would like to add to kurma



Then add ginger and garlic to a jar



Then add all the aromatic spices like cinnamon, cardamom, cloves, black stone flower 



Add fennel 





Then add a hand full of coriander and mint leaves


Blend it and add  chopped tomatoes


Now grind them to make a fine paste and keep it aside 


Place a pressure cooker, add oil and one bay leaf then goes in the sliced onion, saute well till it becomes translucent


Add the ground paste and saute well till the oil gets separated from the gravy


Add turmeric powder, chilli powder, garam masala and coriander powder and give a good mix



Add all the chopped veggies




Now add required water


Add coconut, cashew and poppy seeds to a blender and make a fine paste by  adding little water to it



Add this paste, this will thicken the consistency of the kurma,



Finally add required salt


Now close the lid and cook till one whistle and turn off the flame, let the pressure release by itself naturally,



Vegetable kurma is ready to serve
