My all time favourite vendakkai pachadi is very easy to make,we can make pachadi with many vegetables like raw mango, bitter gourd and root vegetables like yam so all the pachadi tastes good because it has almost all the taste.


The secret ingredient is moong dal, adding moong dal to this pachadi will turn the pachadi very delicious and tasty.

The consistency of the pachadi will be very rich when moong dal is added, do not add too much of moong dal just a spoon full of moong dal is more than enough that goes well with sambar rice and even with plain rice.

Ingredients

Oil                -2 tbsp
Mustard        -1/2 tspn 
Onion             -2
Tomato          -4 medium sized 
Ladies finger/vendakkai - 1/2 kg
Moong dal         -1 tbsp
Turmeric Powder -1/4 tsp
Chilli powder    - 1 1/2 tbsp
Coconut    -1/4 cup
Shallot        -8 nos
Cumin          -1/2 tsp 
Curry leaves
Salt as required

Instructions

Place a pressure cooker on the stove add oil and mustard seeds let it crackle then goes in the curry leaves,add  sliced onions and saute well till it is translucent then add chopped tomatoes, give a good mix

Then goes in the finely chopped ladies finger or okra stir well in a high flame then add moong dal and goes in the chilli powder and turmeric powder add a cup of water,required salt 

Now add cumin, shallot and coconut to a jar and grind it well add this coconut paste to pachadi and close the lid, cook till two whistles and turn off the flame.

Let the pressure release naturally,add chopped coriander leaves for good aroma pachadi is ready to enjoy with sambar rice

Add chopped tomatoes and give a good mix



Add finely chopped ladies finger or okra or vendakkai


Add a little moong dal



Then add chilli powder


Add turmeric powder


Add required salt and water



Then add cumin, shallots and coconut in a jar



Make a fine paste by adding little water


Finally add this paste to pachadi



Give a good mix and close the lid, cook till two whistles, let the pressure release naturally., that's it vendakkai pachadi is ready to enjoy
