Mixed vegetable sambar
South Indian recipe
All time favourite recipe, we can do this recipe when we have left over vegetables, which tastes very flavourful and tasty. The flavour of all the vegetables itself will make sambar very tasty
Adding lentils toor dal /tur dal or thuvaram parupu will make the sambar very healthy because it contain protein.
Ingredients
- Oil -2 tbsp
- Mustard -1 tspn
- Cumin -2 tspn
- Turmeric powder 1/4 tspn
- Tamarind - small lemon size
- Chilli powder -2 tspn
- Shallot -7
- Coconut -1/2 cup
- Toor dal -1/2 cup
- Salt as required
- Curry leaves
- Coriander leaves
Vegetables
Onion, tomato, brinjal, drumstick, carrot and beans.
Instructions
Place a kadai on stove, add all the vegetables, add water then add masalas like chilli powder, turmeric powder and add required salt for the vegetables, bring it to boil. Let the vegetables cook well.
How to make dal
Take a pressure cooker and add dal and water, cover the lid and cook till 4 whistles
How to make coconut paste
Take a jar and add coconut,cumin,shallot and grind it well. You can also add water and make a fine paste but I'm not going to add water, I'm just going to make a coarse paste
Now soak tamarind and give a good mix with your hand,add this tamarind water to sambar, then goes in the dal and coconut paste, now bring it to boil until the raw smell of cumin disappear.
Add oil in another small pan then add mustard, finely chopped onion and curry leaves, turn off the flame when the colour of the onion and curry leaves changes.
Add this to sambar and turn off the flame. add finely chopped coriander leaves, it gives a good flavour to the sambar

In a kadai add all the chopped veggies and add water
Add chilli powder, turmeric powder and required salt, bring it to boil, allow the vegetables to cook.
Add coconut, cumin and shallot to a jar and make a coarse paste
Now add tamarind water, coconut paste and dal to the sambar
And bring it to boil. Then add oil in another small pan for seasoning, then add mustard,chopped onion and curry leaves,add this to sambar and finally add coriander leaves, turn off the flame.
Mixed vegetable sambar is ready to serve with white rice.
