Beetroot poriyal
Beetroot stir fry (South Indian recipe)
Beetroot is favourite among kids and attracted by its vibrant colour, also it has many health benefits.
Beetroot are highly nutritious and good for heart, brain and supports digestion.
It also lower the blood pressure and prevents anemia.Beetroot is a popular star in ABC juice nowadays.
This beetroot poriyal is very simple, tasty and healthy recipe, it goes well with sambar rice.
Ingredients
- Beetroot -2 medium size
- Onion -1 small size
- Cumin -1 tbsp
- Mustard and dal -1 tbsp
- Green chilli -2 nos
- Garlic -2 cloves
- Oil -1 tbsp
- Water -1 cup
- Salt as required
- Curry leaves
Instructions
Place a pan on medium heat add oil and mustard, then add onion and curry leaves let it cook for a minute and then add chopped beetroot,water and give a good mix cover the lid and cook on a low to medium flame until it becomes soft.Add cumin,garlic and green chilli to a blender or jar and just crush it or pulse it. Then add this to beetroot poriyal or beetroot stir fry, finally add grated coconut and turn off the flame. Beetroot poriyal is ready to serve
Beetroot poriyal recipe with pictures
Take two medium size beetroot, peel the skin off and chop the beetroot as per your wish
Place a Pan on stove and add oil, mustard and dal
Add onion and curry leaves
Add beetroot
Add a cup of water
Cover the lid and cook for 10 to 15 minutes on a medium to low flame
Add cumin, garlic and green chilli to a jar
Crush it
Add crushed spices to the poriyal and give a good mix, cook till the raw smell of cumin, green chilli and garlic disappear.
Add required salt
Finally add grated coconut and turn off the flame
Beetroot poriyal is ready to serve with sambar rice or a side dish for lunch
